Is it required to use port 1433 to connect to SQL? Can we use a non-standard port?

You can use any port. Make sure to open the port in your firewall(s) and specify it in the connection strings on the Bastion, Access Portal, and Edge. However, this might cause issues with High Availability for the SQL.
